Meal Planning Monday - Week 11

Monday - we had a late lunch consisting of burgers from the grill at the in-law's house so we didn't have a planned dinner Tuesday - Spiced Pork with Bourbon Sauce

Wednesday - Chicken Fried Rice

Thursday - Philly Cheesesteak Sandwiches

Friday - Pizza

Saturday - Family and Friends are coming into town, so there's a high probability that we will eat out

Sunday - Our daughter's first birthday is today and we are having a party, so I'm banking on some yummy leftovers!

Meal Planning Monday – Week 9

Yes, it's not Monday and guess what...there's no meal plan either!  This week's goal is to avoid going to the grocery store!  So with that in mind, I'm getting creative with what we already have and plan to venture out for some staple food supply items if we need them.  It's going good so far and I promise to have a meal plan for next week.

Did pretty good with the meal plan last week until the weekend hit.  The husband even asked tonight, what happened to having Blue Hake one night!  Oh well, the weekend got the best of us and since August 1st starts the super get healthy plan, Monday and Tuesday will be out "last suppers"! Monday - Eat out

Best trip you've been on?

I have been very fortunate to have traveled to some great places and the best trip by far was the trip my husband and I took to Sweden for Christmas!

Best idea for a girl's weekend trip?

I have not really been on many girl weekend trips, so maybe Vegas or New York City would be fun!

Best idea for a couples trip?

Since we have been married for many years, we have taken multiple trips just ourselves. I have enjoyed the trips where neither of us have been to the destination so that we both get to experience it together. Once place we have talked about going and have yet to visit is Portland, Oregon.

Best vacation on the cheap:

Since we do not live in a big city, there are a few big cities that are within a good driving distance, such as Dallas and St. Louis. For our first anniversary, we took a trip to St. Louis and had a great time and still go back there from time to time. The botanical garden is a must if you ever take a trip to St. Louis.

Place you most want to visit:

I really want to see the Northern Lights, so Norway!

Vacation necessities:

A great bag to carry my electronic devices - I have a Timbuk2 messenger bag that I have taken on many trips, both flying and car rides. Very happy with how well it has held up and still looks great.

My elctronic devices - iPad, Kindle, MacBook and iPhone. When flying, I keep my MacBook at home to reduce the amount of weight I am carrying around

If flying, great earphones - I love my earphones from Shure because they are great about blocking outside noises.

Comfortable shoes - Hands down, Toms are the greatest. They are easy to slip on and off for security when flying. These are the only shoes that I have purchased and then wore all day my first day wearing them. I had no blisters from trying to "break them in"!

Meal Planning Monday - Week 2

This week will be interesting since it's 4th of July week and family is coming in. Not sure how much planning I can do, so let's see how it goes! Monday: Chicken patty sandwiches with sweet potato fries

Tuesday: We have hair appointments & this is the day my parental units are coming into town so probably eating at a restaurant.

Wednesday: 4th of July Festivities!!!! Breakfast: My parents will want to see P as soon as possible in the morning, so I'll make the Creme Brûlée French Toast again since I still have all the ingredients & it was tasty! Lunch: who knows...maybe deli sandwiches! Dinner: heading over to the hubs Grandma's house for full 4th of July fun, so a cookout!

Thursday: Turkey Crockpot Meatballs & spaghetti

Friday: Flat Bread Pizza (for some reason I always think of Fridays as pizza & movie night!)

Saturday: Healthy Baked Chicken Nuggets

Sunday: Turkey Burgers

Looks like I need to find some side items, but not too bad for a crazy week.

German Potato Salad Recipe

A few days ago on Twitter, someone I follow tweeted about potato salad and I immediately started craving German potato salad. My husband's family on his dad's side is German, so this is how I was introduced to this delicious type of potato salad.  This is not your typical mustard or mayo based potato salad because neither of those ingredients are in it.  So here's the list of ingredients you need:

  • 2 lbs of Red Potatoes
  • 4 slices of Bacon
  • 1 Tbsp All-purpose Flour
  • 1 Tbsp Sugar
  • 1/2 cup Water
  • 5 Tbsp White Vinegar
  • 1 cup chopped Onion
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper


  1. Boil the potatoes with the skin on.  Once the potatoes are tender and a little firm, drain the water and then let them cool.  Once the potatoes are cooled, slice the potatoes into cubes and then set aside.
  2. On medium high heat, fry the bacon.  Since the bacon needs to be 'crumbled', I like to cut up my bacon into pieces before I fry it, so that is what I did.  Once your bacon is cooked, remove the bacon from the pan and lay onto paper towels to drain the fat and leave the bacon grease in the pan.
  3. Add the chopped onion to the pan with the bacon grease and sauté for a few minutes or until the onions are golden.
  4. Once the onions are golden, turn down the heat to medium and add the salt, pepper, sugar and flour to the pan and stir until fully incorporated.  Gradually stir in the white vinegar and water to the mixture in the pan and then simmer for a few minutes until the sauce has thickened.
  5. Turn the temperature of your stove to medium-low and gently stir in the potatoes and crumbled bacon.  Cover and let cook for a few minutes so that the potatoes can get heated throughly.  Once potatoes are heated, keep on low until ready to serve.

Inquiring Mondays - Overnight Stay at Grandma's

Baby girl is about to experience a couple of nights not in her own bed, nor in her own house. Also, we will not be with her, she will be at Grandma's house. I'm not sure how I'll do since this will be the first couple of nights I have not put her to bed or been there when she wakes up. Grandma will have to send me tons of pictures and maybe there will be some time on Skype or FaceTime! Aside from all the emotions, I need to figure out what all I need to ensure baby girl has everything he needs. Grandma has a pack n play, stroller, diapers, wipes, formula, bibs, burp cloths and spoons, so I don't need to pack that, so here is what I'm thinking: Car seat and base Baby food (puréed foods & oatmeal) Clothes for the day & night Bottles Bottle brushes & drying rack Pacifiers Toys Gas drops Infant Ibuprofen Diaper rash cream Sound machine Teething items Rick n play with toy bar - this is just in case the pack n play does not work for sleeping Schedule of feedings and when she normally naps

So, did I forget anything moms?
